Ingredients

- 1 cup lentils
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat to sauté the vegetables.
- Add the onions, carrots, and celery, and sauté until softened, about 5–7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the lentils, diced potatoes, vegetable broth, cumin, thyme, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30-40 minutes until the lentils and potatoes are tender.
- Adjust the seasoning if needed. Serve warm and enjoy!

Rinse lentils before cooking and feel free to add additional vegetables for extra nutrition.
