- 1 cup Cheddar cheese, shredded

- 1 Onion, chopped
- 4 cups Vegetable broth
- 1 cup Heavy cream
- Salt, to taste
- Pepper, to taste
- Fresh herbs (such as thyme or parsley), for garnish
Instructions
- Peel and dice the potatoes and onion.
- In a large pot, sauté onion and garlic until fragrant.
- Add diced potatoes and vegetable broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Mash some of the potatoes for a creamy texture.
- Stir in heavy cream and cheese, mixing until melted.
- Season with salt, pepper, and fresh herbs.
- Serve warm with garnished cheese and herbs.
Notes
For extra creaminess, use a hand blender to puree part of the soup. Adjust thickness by adding more or less heavy cream or broth.
