Instructions
- Brown the Beef: Heat the vegetable oil in a large skillet over medium-high heat. Add the beef stew meat and brown it on all sides. Once browned, remove from heat and transfer to a slow cooker.
- Sauté Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent, then transfer to the slow cooker.
- Combine Ingredients: Add the beef broth, diced tomatoes with green chilies, black beans, kidney beans, corn, potatoes, bell pepper, chili powder, cumin, and smoked paprika to the slow cooker. Stir well to combine.
- Season: Add salt and pepper to taste, ensuring an even distribution.
- Slow Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
- Final Touches: Stir the stew well before serving and adjust seasoning if needed.
