- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound potatoes, diced
- 4 cups vegetable or chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup green beans, trimmed and cut into pieces
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add onions, carrots, celery, and garlic, sauté until vegetables soften.
- Transfer the vegetable mix into the slow cooker.
- Stir in the potatoes, broth, tomatoes, thyme, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the green beans.
- Ladle soup into bowls and garnish with fresh parsley. Enjoy hot.
