- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup white rice
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced

- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery, then sauté for about 5 minutes or until the vegetables have softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Introduce the ground beef, breaking it up with a spoon, and cook until it’s browned throughout.
- Mix in the diced tomatoes, beef broth, rice, oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat to a simmer, cover the pot, and let it cook for about 20-25 minutes or until the rice is tender.
- Taste and adjust the seasoning as needed before serving hot.
Notes
