Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sautéing until softened.
  3. Add ground turkey, cooking until browned.
  4. Stir in bell peppers, diced tomatoes, kidney beans, and black beans.
  5. Pour in vegetable broth and add chili powder, cumin, salt, and pepper. Stir to combine.
  6. Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
  7. Serve hot, possibly topped with cheese or sour cream.
