- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sautéing until softened.
- Add ground turkey, cooking until browned.
- Stir in bell peppers, diced tomatoes, kidney beans, and black beans.
- Pour in vegetable broth and add chili powder, cumin, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
- Serve hot, possibly topped with cheese or sour cream.
