Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup white chocolate, melted
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add melted white chocolate, powdered sugar, and vanilla; mix until combined.
  4. In a separate bowl, whip heavy cream to stiff peaks and gently fold into cream cheese mixture.
  5. Fold in chopped pistachios.
  6. Pour and spread cheesecake filling into the crust.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
  9. Top with additional pistachios before serving.
