Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Add melted white chocolate, powdered sugar, and vanilla; mix until combined.
- In a separate bowl, whip heavy cream to stiff peaks and gently fold into cream cheese mixture.
- Fold in chopped pistachios.
- Pour and spread cheesecake filling into the crust.
- Bake for 50-60 minutes or until the center is set.
- Let cool to room temperature, then refrigerate for at least 4 hours before serving.
- Top with additional pistachios before serving.
