- 1 lb boneless skinless chicken breast
- 1 cup brown rice or quinoa (cooked according to package instructions)
- 1 cup cherry tomatoes (halved)
- 1/2 cup red onion (diced)
- 2 cups lettuce or baby spinach (shredded)
- 1 can (15 oz) black beans (rinsed thoroughly)
- 1 cup corn kernels (optional)
- 1/2 cup light ranch dressing
- 1/4 cup BBQ sauce
- 1/4 cup shredded cheddar cheese
- Fresh cilantro or green onions (optional garnish)
Instructions
- Whisk together olive oil, garlic powder, smoked paprika, salt, and pepper to create a marinade for the chicken.
- Rub the marinade on the chicken breast and let it sit for about 10 minutes.
- Heat a grill pan over medium-high heat and cook the marinated chicken for 6 to 7 minutes on each side.
- Remove the chicken from heat and let it rest for 5 minutes before slicing.
- Cook your brown rice or quinoa as per package instructions and prepare the fresh veggies.
- Assemble in serving bowls, starting with the grains and topping with corn, black beans, cherry tomatoes, onion, shredded greens, and the sliced chicken.
- Mix ranch dressing and BBQ sauce in a bowl and drizzle over each bowl.
- Sprinkle cheddar cheese and garnish with cilantro or green onions before serving.
Notes
For stronger flavor, marinate the chicken for 30 minutes to several hours. Don’t overcrowd the pan while cooking.
