Description

Delicious high-protein chicken enchiladas rolled in corn tortillas, topped with creamy white sauce and cheese.


Ingredients

  • 2 cups shredded chicken
  • 8 corn tortillas
  • 1 cup white sauce (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
