Description

These High Protein Chicken Enchiladas are a delightful twist on a classic Mexican dish, packed with flavor and nutrition, perfect for family dinners or meal prep.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast (cooked and shredded)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 can (15 oz) red enchilada sauce
  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1 tbsp lime juice (freshly squeezed)
  • 8 high-protein or low-carb tortillas (fajita size)
  • 1 cup shredded Mexican cheese blend
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Combine the cooked shredded chicken, rinsed black beans, chili powder, cumin, and garlic powder in a large bowl. Mix well until everything is evenly combined.
  3. Whisk together the red enchilada sauce, plain Greek yogurt, and fresh lime juice in a separate medium bowl until smooth.
  4. Pour a thin layer of the sauce into the bottom of the prepared baking dish. Warm the tortillas slightly in the microwave to make them pliable.
  5. Dip one tortilla into the sauce, then place it on a flat surface. Spoon about 1/8th of the chicken filling down the center, roll it up tightly, and place it seam-side down in the baking dish.
  6. Continue this process with the remaining tortillas and filling, arranging them snugly in the dish.
  7. Spread the rest of the creamy enchilada sauce over the top, sprinkling the shredded cheese evenly.
  8. Bake for 20-25 minutes, until the cheese is melted and bubbly. Let rest for 5 minutes before garnishing with cilantro and serving.

Notes

For a healthier option, choose leaner chicken cuts. You can prepare the filling in advance for quicker assembly.
