- 2 pounds ground beef (80/20 blend recommended)
- 3 medium russet potatoes (peeled and diced into 1-inch cubes)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 2 tablespoons tomato paste
- 1/2 cup beef broth or water
- Fresh parsley (chopped, for garnish, optional)
Instructions
- Wash and peel the russet potatoes, then dice them into 1-inch cubes. Rinse in cold water and pat dry.
- Heat olive oil in a skillet over medium-high heat and add diced potatoes. Cook for 8-10 minutes, stirring occasionally, until tender and golden brown.
- Remove potatoes from the pan and set aside. In the same skillet, add ground beef, cook for 5-7 minutes until browned, and drain excess fat.
- Add chopped onion to the pan, cooking for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
- Mix in paprika, oregano, salt, and black pepper. Add tomato paste and cook for 1-2 minutes to caramelize.
- Pour in beef broth, scrape up browned bits, and fold back in the cooked potatoes. Cover and simmer on medium-low for 10-15 minutes until potatoes are fork-tender.
- Taste and adjust seasoning if needed. Let stand for 2-3 minutes before serving, then garnish with parsley.
