Description
A delicious and nutritious pudding packed with protein, perfect for breakfast, dessert, or a satisfying snack.
Ingredients
Scale
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup chia seeds
- 1 cup strawberries, pureed
- 2 tablespoons maple syrup (optional)
- 1 teaspoon vanilla extract
- Fresh strawberries for topping
Instructions
- Mix together the almond milk, chia seeds, pureed strawberries, maple syrup (if using), and vanilla extract in a bowl. Make sure everything is evenly combined for the best consistency.
- Stir well to combine and let the mixture sit for about 5 minutes to allow the chia seeds to start absorbing the liquid.
- Stir again to prevent any clumping of the chia seeds. After mixing, cover the bowl and refrigerate for at least 120 minutes or ideally overnight.
- Serve topped with fresh strawberry slices for an extra fruity kick.
Notes
For optimal flavor, allow the pudding to sit overnight. Experiment with different toppings like nuts or granola.
