Ingredients

  • 1/2 teaspoon vanilla extract
  • 1 cup dark chocolate chips (or dairy-free chocolate for a vegan option)
  • 24 whole almonds
  • A pinch of salt

Instructions

  1. Prepare the Coconut Mixture: In a bowl, mix the shredded coconut with sweetened condensed milk and vanilla extract until well combined.
  2. Form the Coconut Centers: Line a baking sheet with parchment paper and shape about a tablespoon of the mixture into small bars, placing them on the baking sheet.
  3. Add Almonds: Place a whole almond on top of each coconut bar, pressing down gently to adhere.
  4. Melt the Chocolate: Melt the dark chocolate chips in a microwave-safe bowl in intervals of 30 seconds, stirring in between.
  5. Coat with Chocolate: Dip each coconut bar with the almond into the melted chocolate, allowing excess to drip off before placing back on the parchment.
  6. Chill and Harden: Refrigerate for about 30 minutes until the chocolate hardens.
