Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and sauté for 2-3 minutes until tender.
  3. Push the vegetables aside and crack the eggs into the skillet, scrambling until fully cooked.
  4. Add the cooked rice and soy sauce, mixing everything thoroughly.
  5. Stir and cook for another 3-5 minutes, stirring frequently.
  6. Toss in the chopped green onions and season with salt and pepper to taste.
  7. Serve hot, garnished with additional green onions if desired.

Notes
