Description

Delight in these nostalgic homemade oatmeal cream pies featuring chewy oatmeal cookies and a sweet, creamy filling.

Ingredients

Scale
  • 1 cup unsalted butter, softened (226 grams)
  • 1 cup brown sugar, packed (200 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour (250 grams)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter, softened (168 grams, for filling)
  • 2 ounces cream cheese, full-fat, brick style (57 grams)
  • 34 cups powdered sugar (330440 grams)
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1 tablespoon cream (if needed for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the molasses, vanilla extract, and eggs until fully combined.
  4. Whisk together the flour, cinnamon, baking soda, and salt in a separate bowl, then gradually add this to the wet ingredients.
  5. Stir in the oats until evenly distributed throughout the dough.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them apart.
  7. Bake for 10-12 minutes, or until golden and firm around the edges. Let them cool completely.
  8. Combine the softened cream cheese and butter in a mixing bowl and beat until smooth.
  9. Gradually add in the powdered sugar, vanilla extract, and salt until well combined. If too thick, add cream one tablespoon at a time.
  10. Spread a generous layer of frosting on the flat side of one cookie and top with another, flat side down, pressing gently.

Notes

Ensure your butter is softened but not melted for the best texture. Chill the dough for thicker cookies, and allow cookies to cool completely before frosting.
