  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter (softened) for filling
  • 2 ounces cream cheese (full-fat, brick style)
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract for filling
  • 1/4 teaspoon salt for filling
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in molasses and vanilla extract, then add the two eggs, one at a time.
  4. Whisk together the flour, cinnamon, baking soda, and salt in another bowl. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in the oats gently until evenly distributed.
  6. Drop spoonfuls of dough onto the prepared baking sheets and bake for about 10-12 minutes. Allow cooling completely.
  7. Beat the softened butter with cream cheese for the filling until smooth and well-combined.
  8. Gradually whisk in powdered sugar, vanilla extract, and salt. Add cream if needed to reach desired consistency.
  9. Turn half of the cooled cookies upside down and spread a generous amount of cream filling on each.
  10. Place the remaining cookies on top to create sandwiches.

Notes
