- 2 pounds of Yukon Gold or Russet potatoes
- 3 tablespoons of olive oil

Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut the potatoes into even-sized chunks (1 to 2 inches).
- Boil the potatoes in salted water for about 10 minutes until slightly tender.
- Drain the potatoes and let them sit for a few minutes to dry out.
- Toss the potatoes in a large bowl with olive oil, salt, pepper, and any optional seasonings.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 30-40 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot and enjoy!
