Description

Ingredients

  • 2 pounds of Yukon Gold or Russet potatoes
  • 3 tablespoons of olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • Optional: garlic powder, onion powder, fresh rosemary or thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the potatoes into even-sized chunks (1 to 2 inches).
  3. Boil the potatoes in salted water for about 10 minutes until slightly tender.
  4. Drain the potatoes and let them sit for a few minutes to dry out.
  5. Toss the potatoes in a large bowl with olive oil, salt, pepper, and any optional seasonings.
  6. Spread the potatoes on a baking sheet in a single layer.
  7. Roast in the oven for 30-40 minutes, flipping halfway through, until golden brown and crispy.
