Ingredients

  • 1 cup Fresh strawberries, pureed
  • 1 cup Powdered sugar
  • 1/2 cup Unsalted butter, softened (for frosting)
  • 23 tbsp Heavy cream
  • 1 tsp Vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Sift together the flour, baking powder, and salt in a bowl.
  3. Beat the butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Incorporate the milk and vanilla extract, then gently fold in the pureed strawberries.
  6. Mix in the flour mixture until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely before frosting.
  10. Beat the butter and powdered sugar until smooth, then gradually add heavy cream and vanilla, beating until fluffy.
  11. Spread the frosting on the cooled cake and garnish with fresh strawberries if desired.
