  • ½ cup sour cream
  • 1 cup fresh strawberries (finely chopped)
  • ½ cup strawberry puree (blend fresh strawberries until smooth)
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup strawberry puree
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (or milk, if needed)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper to prevent sticking.
  2. Whisk together the cake flour, baking powder, and salt in a medium bowl; set aside.
  3. Beat the softened butter and granulated sugar together on high speed until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
  5. Combine the whole milk and sour cream in a small bowl, then add it to the butter mixture.
  6. Add the dry mix to the butter mixture in three parts, alternating with the milk mixture, and mix just until combined.
  7. Fold in the strawberry puree and finely chopped strawberries until evenly distributed.
  8. Divide the batter evenly between the prepared pans, smoothing the tops with a spatula.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  11. Beat the softened butter on high speed until smooth and creamy, about 2 minutes.
  12. Gradually add the powdered sugar, mixing well after each addition until fully incorporated.
  13. Pour in the strawberry puree and vanilla extract, mixing until well combined.
  14. Add heavy cream as needed for desired consistency and a pinch of salt, mixing on high for another 2 minutes.
  15. Place one cake layer on a serving plate, spread frosting on top, then add the second layer and frost the entire cake.
  16. Garnish with fresh strawberries if desired and serve immediately.
