- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the seasoned chicken for 3-4 minutes per side. Remove and set aside.
- In a bowl, mix BBQ sauce, honey, and minced garlic for the marinade.
- Add uncooked rice to the same pan and toast for 1-2 minutes, then add chicken broth and half of the sauce.
- Return the chicken to the pan, pour remaining sauce over it, cover, and simmer on low heat for 15 minutes.
- If using mixed vegetables, add them, cover, and cook for another 5 minutes until the rice is tender.
- Let sit for 5 minutes before garnishing with green onions and serving hot.
Notes
For better results, use chicken thighs for moisture. You can customize the sauce by adjusting honey and BBQ sauce ratios.
