Description

A delightful dish featuring juicy chicken coated in honey BBQ sauce served over fluffy rice.


Ingredients

  • 1 pound Chicken breast, cut into pieces
  • 1 cup Rice
  • 1 cup Chicken broth
  • 1/2 cup BBQ sauce
  • 1 tablespoon Honey
  • 1 tablespoon Olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Add the chicken pieces, season with salt and pepper, and cook for about 6-8 minutes until browned and cooked through.
  3. In a bowl, mix together the BBQ sauce and honey; pour this mixture over the cooked chicken and stir to coat the pieces evenly.
  4. Continue to cook for a few more minutes until the sauce caramelizes slightly, giving the chicken a nice glossy finish.
  5. Meanwhile, in a separate pot, combine the rice and chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is tender.
  6. Serve the BBQ chicken over the rice and garnish with chopped green onions.

Notes

For a vegan version, substitute chicken with seitan or tempeh and use vegan BBQ sauce.
