- 1 pound Chicken breast, cut into pieces
- 1 cup Rice
- 1 cup Chicken broth
- 1/2 cup BBQ sauce
- 1 tablespoon Honey
- 1 tablespoon Olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a skillet over medium heat until it shimmers.
- Add the chicken pieces, season with salt and pepper, and cook for about 6-8 minutes until browned and cooked through.
- In a bowl, mix together the BBQ sauce and honey; pour this mixture over the cooked chicken and stir to coat the pieces evenly.
- Continue to cook for a few more minutes until the sauce caramelizes slightly, giving the chicken a nice glossy finish.
- Meanwhile, in a separate pot, combine the rice and chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is tender.
- Serve the BBQ chicken over the rice and garnish with chopped green onions.
Notes
For a vegan version, substitute chicken with seitan or tempeh and use vegan BBQ sauce.
