Description

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo sauce (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together honey, chipotle in adobo sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a marinade.
  2. Place the chicken breasts in a large resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, preferably 1-2 hours.
  3. Preheat the grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
  5. Allow the chicken to rest for about 5 minutes before slicing it into strips or bite-sized pieces.
  6. In a bowl or meal prep container, layer the ingredients: cooked rice, black beans, corn, grilled chicken, diced avocado, and cherry tomatoes.
  7. Finish with fresh cilantro and a squeeze of lime juice. Serve immediately or store in the fridge for meal prep.
