Description

A delightful combination of sweet and smoky Honey Chipotle Chicken Bowls, perfect for any gathering or casual night in.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 2 tablespoons chipotle pepper in adobo sauce, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup cooked rice (white, brown, or your preferred type)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. In a small bowl, combine honey, chopped chipotle peppers in adobo sauce, lime juice, ground cumin, garlic powder, smoked paprika, salt, and black pepper. Stir well.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until golden brown and cooked through.
  3. If you haven’t prepared the rice, follow package instructions to cook it.
  4. Once the chicken is cooked, let it rest and then slice it into strips or cubes.
  5. In the same skillet, heat the honey-chipotle mixture for 1-2 minutes, scraping any browned bits from the bottom.
  6. Add the cooked chicken back and stir to coat in the sauce; let simmer for a couple of minutes.
  7. Layer the cooked rice in bowls, adding corn, black beans, avocado, cherry tomatoes, red onion, and top with honey-chipotle chicken. Garnish with cilantro and lime wedges.

Notes

Consider marinating the chicken in the honey-chipotle sauce for added flavor. Use a meat thermometer to avoid overcooking chicken.
