- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons honey
- 2 tablespoons chipotle pepper in adobo sauce, chopped
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 cup cooked rice (white, brown, or your preferred type)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for garnish)
Instructions
- In a small bowl, combine honey, chopped chipotle peppers in adobo sauce, lime juice, ground cumin, garlic powder, smoked paprika, salt, and black pepper. Stir well.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until golden brown and cooked through.
- If you haven’t prepared the rice, follow package instructions to cook it.
- Once the chicken is cooked, let it rest and then slice it into strips or cubes.
- In the same skillet, heat the honey-chipotle mixture for 1-2 minutes, scraping any browned bits from the bottom.
- Add the cooked chicken back and stir to coat in the sauce; let simmer for a couple of minutes.
- Layer the cooked rice in bowls, adding corn, black beans, avocado, cherry tomatoes, red onion, and top with honey-chipotle chicken. Garnish with cilantro and lime wedges.
Notes
Consider marinating the chicken in the honey-chipotle sauce for added flavor. Use a meat thermometer to avoid overcooking chicken.
