Easy and delicious honey chipotle shrimp tacos packed with flavor and topped with fresh salsa for a vibrant taste.


Ingredients

  • 450g (1 lb) Prawns (shrimp), shells removed
  • 2 tablespoons Honey
  • 2 teaspoons Chipotle seasoning
  • 1 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • Olive oil, for cooking
  • 1 cup Mango, chopped
  • 1 cup Cucumber, chopped
  • 1 cup Capsicum, diced
  • 1/4 cup Red onion, diced
  • 1/2 cup Coriander (cilantro) leaves, chopped
  • Juice of 1 lime

Instructions

  1. Toss all the mango cucumber salsa ingredients—mango, cucumber, capsicum, red onion, coriander, and lime juice—into a bowl. Mix everything well and set it aside while you prepare the shrimp.
  2. Heat a pan over medium-high heat and add a drizzle of olive oil. While the pan heats, season the cleaned prawns with chipotle seasoning, garlic powder, and salt.
  3. Add the seasoned prawns to the hot pan and cook for about 1-2 minutes on each side until they turn pink and opaque. Be careful not to overcook!
  4. Warm your tortillas using a microwave or a hot dry pan on the stovetop.
  5. Assemble your tacos by placing a generous scoop of mango salsa on each tortilla, topping with the honey chipotle prawns, and finishing with fresh coriander leaves. Serve immediately and enjoy!

Notes

For deeper flavor, marinate the shrimp in honey and chipotle seasoning for 30 minutes before cooking.
