Description

Succulent shrimp kissed by honey and smoky chipotle, topped with fresh mango cucumber salsa for an explosion of flavor in every bite.


Ingredients

  • 450g (1 lb) prawns (shrimp), shells removed
  • 2 tablespoons honey
  • 2 teaspoons chipotle seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Olive oil (for cooking)
  • 1 cup mango, chopped
  • 1 cup cucumber, chopped
  • 1 cup capsicum, diced
  • 1/4 cup red onion, diced
  • 1/2 cup coriander (cilantro) leaves, chopped
  • Juice of 1 lime

Instructions

  1. Toss all the mango cucumber salsa ingredients in a bowl and set aside until ready to assemble the tacos.
  2. Heat up a pan over medium-high heat with a drizzle of olive oil. Season the prawns with chipotle seasoning, garlic powder, and salt. Add to the pan and cook until they turn pink, about 1-2 minutes on each side.
  3. Warm your tortillas in the microwave or over a hot, dry pan on the stovetop.
  4. Assemble the tacos starting with a layer of mango salsa, then top with the honey chipotle prawns and sprinkle fresh coriander leaves on top. Serve immediately and enjoy!

Notes

Use fresh or high-quality frozen prawns for best results. Adjust chipotle seasoning for desired spice level.
