- 450g (1 lb) prawns (shrimp), shells removed
- 2 tablespoons honey
- 2 teaspoons chipotle seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- Olive oil (for cooking)
- 1 cup mango, chopped
- 1 cup cucumber, chopped
- 1 cup capsicum, diced
- 1/4 cup red onion, diced
- 1/2 cup coriander (cilantro) leaves, chopped
- Juice of 1 lime
Instructions
- Toss all the mango cucumber salsa ingredients in a bowl and set aside until ready to assemble the tacos.
- Heat up a pan over medium-high heat with a drizzle of olive oil. Season the prawns with chipotle seasoning, garlic powder, and salt. Add to the pan and cook until they turn pink, about 1-2 minutes on each side.
- Warm your tortillas in the microwave or over a hot, dry pan on the stovetop.
- Assemble the tacos starting with a layer of mango salsa, then top with the honey chipotle prawns and sprinkle fresh coriander leaves on top. Serve immediately and enjoy!
Notes
Use fresh or high-quality frozen prawns for best results. Adjust chipotle seasoning for desired spice level.
