- 450g (1 lb) shrimp (prawns), shells removed
- 2 tablespoons honey
- 2 teaspoons chipotle seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- Olive oil (for cooking)
- 1 cup mango, chopped
- 1 cup cucumber, chopped
- 1 cup capsicum, diced
- 1/4 cup red onion, diced
- 1/2 cup coriander (cilantro) leaves, chopped
- Juice of 1 lime
Instructions
- Toss all the mango cucumber salsa ingredients in a bowl and set aside until you’re ready to assemble the tacos.
- Heat up a pan over medium-high heat and add a little olive oil.
- Season the shrimp with chipotle seasoning, garlic powder, and salt, making sure they’re evenly coated.
- Add the shrimp to the pan and cook until they turn pink, about 1-2 minutes on each side.
- While the shrimp is cooking, warm up the tortillas in a hot, dry pan until they’re soft and pliable.
- Assemble the tacos by adding a scoop of the mango salsa to each tortilla, then topping it with the honey chipotle shrimp and garnishing with fresh coriander leaves.
- Serve immediately.

Use fresh shrimp for best flavor; adjust spice levels to taste.
