A delightful blend of sweet honey, savory smoke, and healthy veggies make this a perfect weeknight dinner that requires minimal cleanup.


Ingredients

  • 14 ounces smoked sausage (like kielbasa), sliced into ½-inch rounds
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper in a large bowl. Spread in an even layer on the prepared baking sheet.
  3. Roast the sweet potatoes for 15 minutes.
  4. While the potatoes are roasting, prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a saucepan. Simmer over medium heat, then whisk in the cornstarch slurry and cook until thickened.
  5. Add the sliced sausage and broccoli florets to the baking sheet after 15 minutes, drizzle with half the sauce, and toss to coat.
  6. Return the pan to the oven and roast for another 15-20 minutes until sweet potatoes are fork-tender and broccoli is crisp-tender.
  7. Drizzle remaining sauce over the dish, toss and serve immediately.

Notes

Feel free to adjust the sweetness or saltiness of the sauce to your taste. Adding red pepper flakes can give it a spicy kick.
