Description

A delightful combination of tender baked sweet potatoes and savory honey garlic sausage, perfect for a family dinner or casual gathering.


Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound honey garlic sausage, sliced
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pat them dry.
  3. Prick each sweet potato several times with a fork.
  4. Rub each sweet potato lightly with olive oil and place on a baking sheet lined with parchment paper.
  5. Bake the sweet potatoes for about 45 to 50 minutes or until tender.
  6. While the sweet potatoes are baking, heat the butter in a large skillet over medium heat.
  7. Add the sliced honey garlic sausage and cook until browned, about 6-8 minutes. Remove and set aside.
  8. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  9. Stir in honey, soy sauce, and thyme; let simmer until thickened.
  10. Return the sausage to the skillet and toss with the sauce. Season with salt and pepper.
  11. Once sweet potatoes are baked, let them cool, then cut a slit lengthwise and fluff the insides with a fork.
  12. Spoon the sausage mixture over the sweet potatoes and garnish with parsley if desired.

Notes

For a vegan version, swap the sausage for a plant-based alternative and use maple syrup instead of honey.
