- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 pound honey garlic sausage, sliced
- 2 tablespoons butter
- 3 cloves garlic, minced
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pat them dry.
- Prick each sweet potato several times with a fork.
- Rub each sweet potato lightly with olive oil and place on a baking sheet lined with parchment paper.
- Bake the sweet potatoes for about 45 to 50 minutes or until tender.
- While the sweet potatoes are baking, heat the butter in a large skillet over medium heat.
- Add the sliced honey garlic sausage and cook until browned, about 6-8 minutes. Remove and set aside.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Stir in honey, soy sauce, and thyme; let simmer until thickened.
- Return the sausage to the skillet and toss with the sauce. Season with salt and pepper.
- Once sweet potatoes are baked, let them cool, then cut a slit lengthwise and fluff the insides with a fork.
- Spoon the sausage mixture over the sweet potatoes and garnish with parsley if desired.
Notes
For a vegan version, swap the sausage for a plant-based alternative and use maple syrup instead of honey.
