Ingredients

  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or nonstick spray.
  2. Arrange the sausage, sweet potatoes, and broccoli in an even layer on the prepared sheet pan.
  3. Melt butter in a small saucepan over medium heat. Add garlic and sauté for about a minute.
  4. Stir in honey, soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2-3 minutes to combine.
  5. Pour the honey garlic glaze over the ingredients on the sheet pan and toss to coat.
  6. Roast in the oven for 25-30 minutes, stirring halfway through, until sweet potatoes are fork-tender.
  7. Sprinkle with parsley before serving.
