- 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups broccoli florets, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, finely minced
Instructions
- Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or nonstick spray.
- Arrange the sausage, sweet potatoes, and broccoli in an even layer on the prepared sheet pan.
- Melt butter in a small saucepan over medium heat. Add garlic and sauté for about a minute.
- Stir in honey, soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2-3 minutes to combine.
- Pour the honey garlic glaze over the ingredients on the sheet pan and toss to coat.
- Roast in the oven for 25-30 minutes, stirring halfway through, until sweet potatoes are fork-tender.
- Sprinkle with parsley before serving.
