- 2 tablespoons Avocado Oil (or olive oil)
- 3 tablespoons Honey (or maple syrup for vegan)
- 2 tablespoons Soy Sauce (or Tamari for gluten-free)
- 1 teaspoon Sriracha
- 1 cup Brown Rice (or quinoa, cauliflower rice)
- 1 ripe Avocado
- 1 cup Cucumber (any variety)
- 2 tablespoons Olive Oil (extra virgin)
- 2 tablespoons Cilantro (or parsley)
- 2 tablespoons Lime Juice (fresh)
- 1 tablespoon Light Mayo (or plain yogurt)
- 1 teaspoon Paprika
Instructions
- Cook the Rice: Rinse brown rice under cold water and cook according to package instructions until fluffy (about 25 minutes).
- Prepare the Salmon: Mix honey, soy sauce, Sriracha, and paprika in a bowl. Coat the salmon fillets in the glaze.
- Sear the Salmon: Heat avocado oil in a skillet over medium-high heat. Cook the salmon for 4-5 minutes on each side until golden and cooked through.
- Slice the Veggies: Dice avocado and slice cucumber. Toss with lime juice and olive oil.
- Assemble the Bowl: Scoop rice into a large bowl, add glazed salmon, and top with avocado and cucumber. Garnish with cilantro.
Notes
Choose wild-caught salmon for better flavor. Don’t overcook the salmon to prevent dryness.
