Ingredients

  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • ¼ cup honey (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • 1 tablespoon soy sauce (for glaze)
  • 1 teaspoon cornstarch + 1 teaspoon water (for thickening)
  • 1 tablespoon butter (for glaze)
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, garlic, onion, lemon zest, lemon juice, honey, salt, and pepper. Mix until just combined.
  3. Shape the mixture into 1–1½-inch meatballs and place them on the baking sheet.
  4. Bake for 15–18 minutes or until golden and the internal temperature reaches 165°F (74°C).
  5. Whisk together honey, lemon juice, and soy sauce in a saucepan. Bring to a simmer, stir in cornstarch slurry, and cook until thickened. Whisk in butter and red pepper flakes.
  6. Transfer meatballs to a bowl, pour glaze over, and toss to coat.
  7. Garnish and serve warm.

Notes

For extra flavor, add herbs like parsley or cilantro to the meatball mixture. Can be enjoyed with rice, salads, or as finger food for parties.
