- 8 oz rotini pasta
- 1 lb chicken breast, cut into strips
- 2 tbsp hot honey
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1/2 cup bell peppers, sliced
- 1/2 cup onion, sliced
- Parmesan cheese for serving
- Chopped parsley for garnish
Instructions
- Boil the rotini pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
- In a large pan, heat the olive oil over medium heat. Add minced garlic, sliced onion, and bell peppers. Sauté until softened, about 3-5 minutes.
- Add the chicken strips to the pan. Season with salt and pepper. Cook until browned and fully cooked, about 6-8 minutes.
- Stir in the hot honey, mixing well to coat the chicken.
- Toss the cooked rotini into the pan with the chicken and vegetables. Use reserved pasta water as needed for a creamier sauce.
- Serve in bowls topped with grated Parmesan cheese and chopped parsley.
Notes
For a lower spice level, use less hot honey or regular honey instead. Can substitute chicken with tofu or shrimp for variations.
