Ingredients

  • 3 large red beets (or 6 small)
  • 3 large golden beets (or 6 small)
  • 67 carrots
  • 1 Tbsp. olive oil
  • 2 Tbsp. honey
  • 2 Tbsp. butter, melted
  • 1 tsp. sea salt
  • 1/2 tsp. fresh black pepper
  • Additional sea salt and pepper to taste
  • Optional: Fresh parsley

Instructions

  1. Preheat the oven to 450°F.
  2. Peel and wash the beets and carrots.
  3. Slice them evenly for proper cooking.
  4. Place the vegetables on a baking sheet and toss with olive oil, sea salt, and pepper.
  5. Bake for 20 minutes.
  6. Mix melted butter and honey together.
  7. Drizzle the honey butter over the roasted vegetables and toss to coat evenly.
  8. Bake for another 5 minutes, then season with salt and pepper before serving.
