Description

A vibrant mix of Honeycrisp apples, feta cheese, walnuts, and cranberries, creating a refreshing and nutritious salad.

Ingredients

Scale
  • 2 cups fresh mixed greens
  • 1 medium Honeycrisp apple, thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, toasted if desired
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice (or apple cider vinegar)
  • Pinch of salt
  • Cracked black pepper to taste

Instructions

  1. Wash and dry your fresh greens thoroughly.
  2. Thinly slice the Honeycrisp apple and toss slices in lemon juice to prevent browning.
  3. Toast the walnuts in a skillet over medium heat for 2–3 minutes and let them cool.
  4. Arrange the greens in a salad bowl.
  5. Layer the apple slices over the greens.
  6. Sprinkle the walnuts, dried cranberries, and crumbled feta on top.
  7. Drizzle olive oil and lemon juice evenly across the salad.
  8. Season with a pinch of salt and black pepper.
  9. Toss gently to combine and serve immediately.

Notes

For a vegan version, replace feta with avocado or cashew-based cheese. Keep dressing separate until serving to avoid wilting greens.
