Ingredients

  • 8 cups chicken or vegetable broth
  • 1 cup button mushrooms, sliced
  • 1 cup firm tofu, cubed
  • 1/2 cup bamboo shoots, sliced
  • 1/4 cup white vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon white pepper
  • 2 tablespoons cornstarch mixed with 3 tablespoons water (for thickening)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt to taste

Instructions

  1. In a pot, bring the chicken or vegetable broth to a boil.
  2. Once boiling, add the sliced mushrooms, cubed tofu, and bamboo shoots. Cook for about 5 minutes.
  3. Stir in the white vinegar, soy sauce, and white pepper.
  4. Slowly add the cornstarch mixture while stirring continuously to thicken the soup.
  5. Reduce the heat and pour in the beaten eggs, stirring gently.
  6. Adjust the seasoning with salt as needed.
  7. Garnish with chopped green onions and serve hot.
