Description

A delightful bowl featuring tender diced chicken coated in a sticky hot honey glaze, served over fluffy rice with vibrant mixed vegetables.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1/2 cup hot honey
  • 2 cups cooked rice
  • 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. In a large skillet, heat a bit of oil over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes, stirring occasionally.
  3. Stir in the hot honey and soy sauce, cooking for another 2-3 minutes until the chicken is coated and the sauce is heated through.
  4. In bowls, layer the cooked rice and top it with the hot honey chicken and mixed vegetables.
  5. Garnish with sliced green onions and serve.

Notes

For added flavor, marinate the chicken in soy sauce and hot honey for an hour. Experiment with different veggies based on what you have on hand.
