Ingredients

  • 1 lb Ground Beef (80/20 recommended)
  • 1 medium Yellow Onion
  • 2 cloves Garlic
  • 1 tbsp Dijon Mustard
  • 1 tbsp Worcestershire Sauce
  • 2 cups Beef Broth
  • 1 pkg Refrigerated Cheese Tortellini
  • 1 cup Sour Cream
  • 2 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Chopped Parsley

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, seasoning with salt and pepper.
  4. Mix in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, bringing the mixture to a gentle simmer.
  5. Add the refrigerated tortellini and cook according to package instructions until tender, about 3-5 minutes.
  6. Stir in the sour cream until well combined, then adjust seasoning as needed. Garnish with chopped parsley and serve warm.

Notes

For best results, use 80/20 ground beef for moisture. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
