- 1 lb Ground Beef (80/20 recommended)
- 1 medium Yellow Onion
- 2 cloves Garlic
- 1 tbsp Dijon Mustard
- 1 tbsp Worcestershire Sauce
- 2 cups Beef Broth
- 1 pkg Refrigerated Cheese Tortellini
- 1 cup Sour Cream
- 2 tbsp Olive Oil
- to taste Salt
- to taste Black Pepper
- 2 tbsp Chopped Parsley
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, seasoning with salt and pepper.
- Mix in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, bringing the mixture to a gentle simmer.
- Add the refrigerated tortellini and cook according to package instructions until tender, about 3-5 minutes.
- Stir in the sour cream until well combined, then adjust seasoning as needed. Garnish with chopped parsley and serve warm.
Notes
For best results, use 80/20 ground beef for moisture. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
