Ingredients

  • 1 lb Sausage (Italian, chorizo, or breakfast sausage)
  • 1 medium Onion (diced)
  • 2 medium Carrots (diced)
  • 2 stalks Celery (diced)
  • 2 cloves Garlic (minced)
  • 1/4 cup Flour (or cornstarch for gluten-free)
  • 1 12 oz Beer (light ales or lagers)
  • 4 cups Chicken Broth (or vegetable broth)
  • 2 cups Potatoes (diced, or cauliflower for low-carb)
  • 1 tbsp Thyme (fresh)
  • 1 tbsp Smoked Paprika
  • 1 cup Heavy Cream (or half-and-half/cashew cream)
  • 8 oz Cream Cheese (softened)
  • 2 cups Cheddar Cheese (shredded)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add the sausage to the pot and cook until browned, then stir in the onions, carrots, and celery until softened.
  3. Add the minced garlic and cook for one minute until fragrant.
  4. Sprinkle the flour over the mixture and stir to combine.
  5. Slowly pour in the beer while stirring to avoid lumps, then add the chicken broth, potatoes, thyme, and smoked paprika.
  6. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  7. Lower the heat and mix in the heavy cream, cream cheese, and cheddar cheese until melted and smooth.
  8. Season with salt and pepper, then crumble the reserved bacon on top before serving.

Notes

Be sure to taste and adjust seasonings accordingly. Let the soup sit for a few minutes after cooking to thicken and enhance flavors.
