- 1 cup All-purpose flour
- 1/2 cup Powdered sugar
- 1/2 cup Unsalted butter, softened
- 1/4 teaspoon Salt
- 1 cup Granulated sugar
- 2 Large eggs
- 1/4 cup Fresh lemon juice
- 1 tablespoon Lemon zest
- 1/4 teaspoon Baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine the all-purpose flour, powdered sugar, softened butter, and salt in a large mixing bowl.
- Mix until crumbly, then press this mixture into the bottom of the pan.
- Bake the crust for about 15-20 minutes or until it’s lightly golden.
- Whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, and baking powder in another bowl until smooth.
- Pour the lemon mixture over the hot crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before cutting into squares.
