Description

A cozy, one-pot soup combining the rich flavors of cheesy macaroni and a savory cheeseburger. Perfect for busy weeknights or family dinners.

Ingredients

Scale
  • 1 pound Ground Beef (or ground turkey)
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 3 tablespoons Flour
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 4 cups Beef Broth (or vegetable broth)
  • 1 cup Milk (or dairy-free coconut milk)
  • 2 cups Elbow Macaroni (or gluten-free pasta)
  • 4 ounces Cream Cheese (or low-fat cheese)
  • 1 cup Cheddar Cheese (freshly shredded)

Instructions

  1. In a large pot over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Sprinkle the flour over the mixture and stir well to thicken the soup.
  4. Pour in the Worcestershire sauce, garlic powder, onion powder, paprika, and oregano, stirring to combine.
  5. Gradually add the beef broth and milk, bringing it to a gentle boil.
  6. Stir in the elbow macaroni and cook according to package directions until tender, about 8-10 minutes.
  7. Lower the heat and mix in the cream cheese and shredded cheddar cheese until melted and combined.
  8. Ladle the soup into bowls and enjoy!

Notes

For a lighter version, substitute ground turkey for beef. Be careful not to overcook the pasta and feel free to customize with spices to suit your taste.
