- 2 cups mixed seasonal vegetables (carrots, green beans, potatoes, etc.)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil until shimmering.
- Add the diced onion and minced garlic to the pot, sautéing until soft and fragrant, about 3-4 minutes.
- Season the chicken breasts with salt, pepper, thyme, and paprika. Place them into the pot and sear for another 2-3 minutes.
- Pour in the chicken broth and add the mixed vegetables to the pot. Stir gently to combine.
- Close the lid securely and set the Instant Pot to manual high pressure for 10 minutes. Make sure the valve is set to sealing.
- When the cooking time is up, let the pressure release naturally for about 5 minutes, and then quick release any remaining pressure.
- Carefully open the lid, stir the contents gently, and serve hot.
