Description
Hearty and comforting Irish stew made with tender lamb and served with creamy mashed potatoes.
Ingredients

- 2 lbs lamb, cut into pieces
- 4 carrots, chopped
- 3 potatoes, chopped
- 1 onion, chopped
- 3 cups beef or lamb broth
- 2 tbsp olive oil
- 2 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 large potatoes (for mashed potatoes)
- 1/2 cup milk (for mashed potatoes)
- 4 tbsp butter (for mashed potatoes)
- Salt to taste (for mashed potatoes)
Instructions
- In a large pot, heat olive oil over medium heat. Brown the lamb pieces on all sides.
- Add chopped onions and cook until softened.
- Add carrots and potatoes, and stir to combine.
- Pour in the broth and add thyme and bay leaves.
- Bring to a boil, then reduce heat and let simmer for about 1.5 to 2 hours, until the lamb is tender.
- Meanwhile, for the mashed potatoes, boil the potatoes until tender. Drain and mash with milk, butter, and salt until creamy.
- Serve the stew hot alongside the creamy mashed potatoes.
Notes
Use fresh ingredients for the best flavor. You can add more vegetables like peas or celery for extra nutrition. Adjust the seasoning to your preference.
