- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 parsnip, diced
- 2 cups vegetable broth
- 1 cup cooked barley or other grains
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Toss in the diced carrots, potatoes, and parsnip; cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Stir in cooked barley, thyme, rosemary, salt, and pepper.
- Lower the heat and let simmer for 30 minutes until vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For an even heartier stew, mash a few potatoes against the pot for creaminess. Homemade broth enhances flavor.
