- 4 medium potatoes, diced
- 2 carrots, chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 1 cup peas
- 1 teaspoon thyme
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add chopped onions, carrots, and celery, and sauté until softened.
- Stir in garlic and cook for another minute.
- Add diced potatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until vegetables are tender.
- Stir in peas and cook for a few more minutes before serving.
Notes
Add a pinch of red pepper flakes for extra heat. This stew tastes even better the next day.
