Description

A comforting and hearty stew filled with tender potatoes, vibrant carrots, crunchy celery, and bright peas in a rich vegetable broth.


Ingredients

  • 4 medium potatoes, diced
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 4 cups vegetable broth
  • 3 cloves garlic, minced
  • 1 cup peas
  • 1 teaspoon thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add chopped onions, carrots, and celery, and sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add diced potatoes, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  6. Stir in peas and cook for a few more minutes before serving.

Notes

Add a pinch of red pepper flakes for extra heat. This stew tastes even better the next day.
