- 2 fillets Salmon
- Salt, to taste
- Pepper, to taste
- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat your oven to 180°C (350°F).
- In a frying pan, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the thawed spinach and season with salt and pepper. Cook for 2-3 minutes until heated through.
- In a bowl, mix the sour cream with salt, pepper, and a sprinkle of mozzarella. Spread this mixture onto the salmon fillets.
- Place the spinach mixture on top of the salmon, then sprinkle the remaining mozzarella over everything.
- Transfer to a baking dish and bake for 20-25 minutes until the salmon is cooked through and the cheese is golden.
Notes
Use fresh salmon for the best flavor. Ensure spinach is well drained to prevent sogginess. A meat thermometer should read 63°C (145°F) for perfectly cooked salmon.
