  • 1 ½ cups (about 250g) fresh blueberries (or frozen, unthawed)
  • 1 tablespoon all-purpose flour (for coating blueberries, optional)
  • 3 cups (360g) powdered sugar, sifted
  • ¼ cup (60ml) freshly squeezed lemon juice
  • Zest of 1 large lemon
  • 2–4 tablespoons milk or heavy cream

Instructions

  1. Prepare the Dry Ingredients: Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
  2. Cream the Butter and Sugar: In a stand mixer, cream the softened butter and granulated sugar on medium speed for about 3-5 minutes until light and fluffy.
  3. Add Eggs and Flavoring: Beat in the eggs one at a time, then stir in the vanilla extract and lemon zest.
  4. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture at low speed and mix until just combined.
  5. Fold in Blueberries: Toss frozen blueberries in flour and gently fold into the dough.
  6. Chill the Dough: Cover and refrigerate the dough for at least 30 minutes.
  7. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  8. Scoop and Bake: Scoop rounded tablespoons of dough onto the prepared sheets and bake for 10-12 minutes.
