Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and egg to the butter-sugar mixture and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined, avoiding overmixing.
  6. Shape the dough into small 1-inch balls and place them on the baking sheet, spacing them 2 inches apart.
  7. Flatten each dough ball into a thick disk.
  8. Bake for 10 to 12 minutes or until edges are golden and centers are set.
  9. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
  10. While cooling, heat heavy cream in a saucepan until simmering.
  11. Combine brown sugar and cornstarch in a bowl, then add to the simmering cream, whisking until smooth.
  12. Cook the cream mixture for 2 to 3 minutes until slightly thickened, then let cool.
  13. Once cookies are cool, spoon crème brûlée mixture onto each cookie.
  14. Broil cookies for 1 to 2 minutes until topping is golden and caramelized.
  15. Let cool completely before serving.
