- 2 leeks, cleaned and sliced
- 4 cups vegetable broth
- 1 cup fresh dill, chopped
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced

- 2 tablespoons olive oil
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, and sliced leeks. Sauté until soft and translucent, about 5–7 minutes.
- Stir in the diced carrots and continue cooking for another 2-3 minutes until they start to soften.
- Pour in the vegetable broth and bring to a gentle simmer, allowing the flavors to meld.
- Stir in the orzo and cook according to package instructions until al dente, around 8–10 minutes.
- Add the fresh dill, lemon juice, salt, and pepper. Mix well and adjust seasoning to taste.
- Serve warm in bowls and enjoy.
