- 1 lb Ground Beef (Use 80/20 for best flavor and moisture)
- 1 medium Yellow Onion (Substitute with shallots for mildness)
- 2 cloves Garlic (Fresh is best, but minced works too!)
- 1 tbsp Dijon Mustard
- 1 tbsp Worcestershire Sauce
- 2 cups Beef Broth
- 2 cups Refrigerated Cheese Tortellini
- 1 cup Sour Cream
- 1 tbsp Olive Oil (Optional)
- to taste Salt
- to taste Black Pepper
- 2 tbsp Chopped Parsley (Optional for serving)
Instructions
- In a large skillet over medium heat, add olive oil if necessary. Sautรฉ chopped yellow onion until softened, about 3-4 minutes. Then, add minced garlic and cook for an additional minute until fragrant.
- Push the onions to the side and add ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.
- Stir in Dijon mustard, Worcestershire sauce, salt, and black pepper.
- Pour in the beef broth, stirring well. Bring to a gentle boil, then lower the heat and simmer for about 5 minutes.
- Add cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
- Once tortellini is cooked, remove the skillet from heat and stir in sour cream until well combined. Sprinkle with chopped parsley if desired.
Notes
This dish can be made lighter by using ground turkey or chicken. Vegetarian options include mushrooms or lentils. Donโt rush the simmering step to allow flavors to meld.
