- 1 lb Ground Beef (Use 80/20 for best flavor)
- 1 medium Yellow Onion
- 2 cloves Garlic
- 1 tbsp Dijon Mustard
- 1 tbsp Worcestershire Sauce
- 2 cups Beef Broth
- 2 cups Refrigerated Cheese Tortellini
- 1 cup Sour Cream
- 1 tbsp Olive Oil
- to taste Salt
- to taste Black Pepper
- 2 tbsp Chopped Parsley (Optional for serving)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes.
- Add minced garlic and ground beef, cooking until the beef is browned and thoroughly cooked.
- Stir in Dijon mustard and Worcestershire sauce until combined.
- Pour in beef broth, bringing it to a simmer. Once bubbling, add tortellini and cook according to package instructions.
- When tortellini is nearly done, stir in sour cream until it melts into the sauce. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For a vegetarian version, substitute ground beef with plant-based crumbles and use vegetable broth. To enhance creaminess, add more sour cream as desired.
